But let’s be real: breakfast prep can get chaotic. You’re juggling coffee, eggs, fruit, and more, all while trying to keep everything running smoothly.
That’s where my favorite method comes in: making crispy breakfast potatoes in the oven! Instead of hovering over the stove, you can pop your diced potatoes on a baking sheet and let the oven do the work. This way, you’re free to focus on other breakfast tasks while they bake to perfection. This is especially helpful if you have overnight guest or are hosting brunch at your house.
Not only can you fit way more potatoes on a giant baking sheet than in a frying pan, but the results are nothing short of amazing! You’ll end up with golden, crispy potatoes that are perfectly seasoned and so tasty. I use a lot LESS oil in the oven than when cooking them in a skillet on the stove, so they’re actually healthier too. Trust me, this oven method will change your breakfast game.

- While they’re optional, I can’t resist the combination of crispy potatoes and sweet, tender onions. It truly is a match made in heaven! I use yellow or sweet vidalia onions.

- For oil, I love using avocado or olive oil for their rich flavors, but feel free to substitute with vegetable or sunflower oil if you prefer.

- Don’t forget about fresh herbs! Green onions and parsley are my go-tos, but you can also try rosemary, thyme, dill, or chives for a delightful twist.

- If you want to get a little adventurous, consider adding bell peppers or mushrooms—they pair beautifully with the potatoes and onions, enhancing the dish even further.
The Secret to Crispy Oven-Roasted Potatoes
If you want to achieve the ultimate crispy oven-roasted potatoes, here’s the game-changing tip: use an extra-large rimmed baking sheet! This allows you to spread the potatoes out in a single layer, which is crucial for getting that perfect crunch.

The extra space on a large baking sheet ensures that the potatoes roast instead of steam, resulting in a delightfully crispy exterior that you’ll love.
So, if you’re serious about achieving that golden, crunchy goodness, an extra large baking sheet is the ticket. I use mine in so many different ways – even more often the the regular half sheet size. And the best part – it fits into a standard size oven. You just get to utilize the entire oven in the best way.
Using a standard-sized baking sheet? You will need to halve your recipe to avoid overcrowding, and trust me, nobody wants soggy potatoes!
How To Make Crispy Breakfast Potatoes in the Oven
- First, preheat your oven to 425°F. While it’s heating up, pop an extra-large rimmed baking sheet in there too—this will ensure it’s nice and hot when you add the potatoes.
- Next, prep the potatoes.
- Peel and dice the potatoes into small cubes.
- In a large mixing bowl, combine the potatoes with the oil, salt, ground black pepper and dry spices (onion powder, garlic powder, paprika and other seasoning mixes, if using.) Make sure everything is well-coated!
- Once your potatoes are prepped, spread them out evenly on that sizzling hot baking sheet.
- Bake them in the preheated oven for 18-20 minutes. Keep in mind that if your potato pieces are larger, you may need to adjust the cooking time.
- While the potatoes are baking, finely chop your onion and mix it in the same bowl with a little more oil, salt, and pepper.
- After the initial baking time, take the potatoes out and give them a flip.
- Create a little space in the center of the baking sheet and add the onions in a pile. This way, they’ll sauté and steam together beautifully.
- Return everything to the oven and continue baking for another 10-20 minutes, until the onions are tender and the potatoes are crisp and golden.
- Once they’re done, mix the potatoes and onions together and garnish with your favorite fresh herbs.
